Creamy garlic soup

Sauce with a bite

2 spoonfuls   butter
2 spoonfuls   olive oil
2   onion
3 bulbs   garlic
1,5 l   chicken broth
250 ml   whipping cream
1   bay leaf
    fresh parsley and thyme
    salt, pepper



  1. Coarsely chop the onion and garlic ● Melt the butter with oil in a large saucepan, not over a very high heat ● Add the onion and garlic into the saucepan and fry it slowly ● The mixture in the saucepan should turn slightly golden, but not get burnt
  2. Pour over with broth, add salt to taste ● Add fresh herbs ● Do not chop the herbs, tie the whole stems up in a posy ● Finally, add bay leaf and cook for about 15 minutes 
  3. Remove the herbs and bay leaf ● Leave the soup to cool and mix until smooth ● Season with pepper to taste and add cream for a smoother consistency
